Pinterest Food.



So I always go on Pinterest and see all these DELICIOUS looking dishes, and I really want to eat them! So I decided that this summer I am going to try to make as many as I can. The first one I made was an amazingly comforting cauliflower soup which was only with 5 ingredients, completely vegan, and surprisingly filling (and it's just as gorgeous in real life as in the picture). Now, I am not a huge Martha Stewart fan. So to my disdain, the next dish I made is one of hers. I do have to say though, it was quite delish. It was poached eggs and asparagus on top of fettuccine. Then I did a small salad and some roasted tomatoes with some cheese and herbs on top. It was my first time poaching eggs, but it really wasn't a big deal, I did break 2 though!

So I guess I will be posting some more dishes that I make this summer! Maybe I will even try baking!! Okay, that's being optimistic, but we shall see. I am really excited for what I am making this week: it's going to be a Thai curry. Thai food is my FAVORITE. So I am very very very excited. I hope it is gooood.

Vacation.

Who knew vacation was such a great time for watching so much TV that I feel my brain coming out of my ears? Literally, that is all I have been doing. I went to the library to get a bunch of books, but all  I have done is watch a bunch of Christmas movies and half a season of Gossip Girl. I don't even like that show. It is just so addicting.

Anywhooo besides my TV watching habits, my family has a New Year's Eve party every year. This year, it's going to be a little bit bigger because my sister Tanvi just graduated from University of Maryland (Wooo!!) (and she already got a job!), and so she decided to make the party into somewhat of a graduation party as well.

[Ok, before I continue, I have to sidetrack. My sister had the most AMAZING week last week. It was her birthday, she graduated, and got a job. I hope I at some point have a week as great as that!]

Anyways, let me continue. So I do have a lot to do so that I can help my mom with prepping for the party. I am meant to make an eggplant dish. I am not sure what I am going to do. I guess I'll just make it up as I go along. Don't tell my mom though haha (she thinks I know exactly what I am doing). I think I started talking about the New Year's Eve party because I had a funny story....but this is not funny. Sorry.

So I have been looking at eggplant dishes, and I found a few that look good. I think I am going to combine a few recipes. I am pretty sure there are some procedures to cooking eggplant so that it is not bitter that I don't know.....

For my cool thing, I will share a recipe (of eggplant) that I thought sounded delicious from the foodnetwork website:

I usually am not a huge fan of Giada (She over pronounces EVERYTHING. We get it. You're Italian. Goodness Gracious), but this looks reallllyyy good.

I would have to make some modifications thought since I am making it for a party. I am probably going to skip the cheese mixture, cut up to eggplant into little pieces and roast them and then put the tomato sauce and reduce it a bit and then melt some cheese on top. Ok. That is a completely different recipe. haha oh well. Good starting point. But I think I will make this at some point.

Thanks.

Hellloo Everyone!

Today, in honor of Thanksgiving, I am going to list some of the things I am thankful for.

  • Life
  • Friends and Family
  • The clothes on my back
  • FOOD
  • All my senses

My cool thing for today:

Lorraine's Famous Vegetable Pie. 
One word. AMAZING.
Ok this recipe is soooooo easy.

Ingredients:
  • Mixed Vegetables (Frozen or Fresh): Chopped
  • Shredded Cheese (Cheddar/Whatever you like)
  • Butter
  • Onions
  • Garlic
  • Store bought pie crust 
  • Vegetable Stock (Or Chicken if you are not vegetarian)

Directions:

  1. In a big pot, sautee onions and garlic in some butter until onions are translucent
  2. Add mixed vegetables and cook 1/2-3/4 of the way
  3. Add about a 1/2 cup of the vegetable stock
  4. Add a couple tablespoons of butter and mix
  5. ***At this point, if it seems too liquidy, you can add a couple tablespoons of flour. Do keep in mind, however, that the cheese will thicken it a bit.
  6. Add LOTS of shredded cheese!!! (And mix until it is a melty and gooey mixture! Stirring in figure eights helps....I don't know why but it does! Rachael Ray will tell you the same!)
  7. Put into pie pans with crust on top (and butter glaze crust)
  8. Bake according to crust directions
Another way to make is sort of like a Shepard's pie. Instead of pie crust, put mashed potatoes on top and add kidney beans into the veggie/cheese mix.
